Where Are You Fall?!?!

After having a drought filled Summer with temps that were so high we had to have heat advisories I am ready for Fall! Our Summers in the south start a month or more before Summer actually hits. Wish they ended when school started back, but no we have to let our kids go to school in this hideous heat. For us school starts back in 3 weeks and 4 days. For the school itself it starts back in 4 weeks and 4 days, but my children will be attending Louisiana Connections Academy for the first time this year. We are eagerly awaiting the arrival of my Kindergartners school materials to arrive tomorrow and still waiting for my 3rd graders materials to be shipped.

So to let Fall know I am ready for it to hurry up and get here I thought I would post my favorite recipe. This is for something that to me screams fall not only in taste, but in scent as well.

Delicious Pumpkin Bread

Original Recipe Yield 3 medium loaves

3 1/4 cups all-purpose flour
3 cups white sugar
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 cups solid pack pumpkin puree
2/3 cup water
1 cup vegetable oil
4 eggs
1/2 cup chopped walnuts (optional)

Grease and flour three 7 x 3 inch pans. Preheat oven to 350 degrees F (175 degrees C).
Measure flour, sugar, baking soda, salt, and spices into a large bowl. Stir to blend. Add pumpkin, water, vegetable oil, eggs, and nuts. Beat until well combined. Pour batter into prepared pans.
Bake for approximately 1 hour.

Yes nothing says fall and cool weather like yummy Pumpkin Bread!
